"I scream, you scream, we all scream for....."

If there is a flavour and food (and if I had to narrow it down to one) that is my true weakness, it would have to be vanilla ice-cream. For some, that might scream out, "boooring!". For the others, you know what I'm talkin' about. There is something about vanilla that never disappoints. It's reliable, comforting, memorable and keeps me coming back for more. If I'm ever at a fabulous gelato/ ice-cream shop that carries 100+ flavours, which I love by the way, I'll always try 1 new flavour, while my second flavour most likely will be the delicious vanilla. For home, an excellent brand I prefer and suggest is the Safeway Select Vanilla Ice -cream. It is absolutely divine. I highly recommend this brand (for flavour and consistency) instead of any other vanilla variety or double-churned kinds.


Delicious  Dolce de Leche Ice-Cream Pie


INGREDIENTS
Crust
1 1/4 cups graham cracker crumbs
2 tablespoons sugar
1/4 cup melted butter
Pie Filling
2-3 cups Vanilla ice cream (depending on the pie pan size you are using)
Dolce de Leche Sauce
1/4 cup (60 ml) water
1 cup (250 ml) brown sugar
  2/3 cup (150 ml) 35% cream, hot


Toppings (optional)
Whip cream
Raspberries
Strawberries
Blueberries

DIRECTIONS
Crust
1. Turn the oven temperature  to 170°C (325°F). 
2. In a bowl, combine the ingredients. Press lightly into the bottom of a pie pan. Bake for about 10 minutes.
Pie Filling
1. Take out ice cream from the freezer and let soften for 15 minutes, while you prepare the sauce.
Dolce de Leche Sauce
1. In a saucepan, bring to a boil the water and sugar.
2. Cook until the mixture takes on a golden colour.
3. Remove the saucepan from the heat and add the cream.
4. Bring to a boil and simmer for 1 minute. Reserve in a bowl. 
5. Once ice cream has softened, drizzle the sauce into the ice cream and on top of the pie and place into the freezer for 1-2 hours. Serve when pie filling has hardened.
Toppings
Add any topping before serving.
